I've been baking and cooking professionally for 24 years. I have deep knowledge of sourdough and fermentation, laminated pastry, and cakes. I have an extensive savory cooking background and have ghost-written 2 best selling cookbooks and have written recipes for national TV. I have competed on 3 Food Network baking competitions and have one victory under my belt. I am an expert bakery manager, and consider training staff one of my strongest talents.
